What do you get when you combine farmer’s market finds, fabulous weather, furry friends, and a festive feast?  You get the makings of a fantastic anniversary and kick off to the summer season!

Breakfast at Turtle Lake Refuge at the Durango Farmer’s Market.  The founder of this amazing organization and feeding frenzy is Katrina Blair—-friend, colleague and fellow wild foodie!  Check out her book, another Chelsea Green Publishing gem, https://www.amazon.com/dp/B00NP9LHF0/ref=dp-kindle-redirect?_encoding=UTF8&btkr=1 .  Steve and I load up on her sprouts, kombucha, nori seed nut and veggie rolls and other seasonal goodies.

Then we headed over do the James Ranch booth to wrangle up Dan’s famous raw cheeses!

We had already procured some organic grass fed and grass finished flank steak but scored on some fresh radishes, asparagus, basil, cilantro, and wasabi arugula that became part of a celebratory anniversary meal.

Note the color of the chimichurri!  Ingredients:  1 bunch of organic basil, 1 bunch of organic cilantro, 1 jalapeño seeded, 1 thumb length of fresh peeled ginger, juice of half a lime, sea salt to taste and 2TBS olive oil blended in a food processor.  Good on everything!  Even a spoon!  And a rush of dense nutrients including the power of heavy metal chelation via the cilantro.  And our plates were lined with the most amazing “wasabi arugula”—-perfect kick with the flavors of the meal.

We like to grill the marinated radishes and asparagus which creates fantastic texture and flavor.

Putting it all together with a pat (or 2 or 3) of pastured butter and a dollop of chimichurri!

Final ingredient:

Low Carb Margs:)  Ingredients:  good quality 100% pure agave tequila 1 ounce per person with a TBS of lime concentrate or juice of two fresh limes, a few drops of essential oils (I love Veriditas!) of orange or other citrus to give that Contreau/Triple Sec flavor, and the secret ingredient is a hardy splash of Bragg’s Organic Apple Cider Vinegar Limeade (sweetened with Stevia only) to be a sweet and sour or simple syrup stand in.  A hand full of ice, shake, then pour into lime moistened/salt rimmed glasses.

And me with my partner in crime who nourishes my mind, body and soul.

Here’s to a summer filled with all things that bring you joy!
